Goat's cheese and Asparagus Omelette

  • 1 Steam some asparagus in the microwave with a couple of teaspoons of water. This should only take about 2 minutes.
    Whisk 2 eggs with a 2Tbs of milk.
    Put a knob of butter in the pan and melt on a high heat. Add the eggs and turn the flame down to low heat.
  • 2 Cook the omelette for a few minutes until the edges start to crisp.
    Add the asparagus and then slice some goats cheese over the top. Add some salt and pepper.
  • 3 Cover with a lid for a few minutes until the cheese is melted and the underside of the omelette is golden.
    Fold the omelette in half and serve!
