  • 1 The pudding if not prepared in advance we should fry it a bit, remove the skin and slice/break it. Omelette Black Pudding 1
  • 2 We peel the potato and cut it as for a normal omelette. We place it in a pan with plenty of olive oil and salting it a bit. In a bowl, we beat the eggs and put another bit of salt. Omelette Black Pudding 2
  • 3 When the potato is cooked take it off the pan and drain it well. Then mix it with eggs and incorporate the black pudding. We put the mix in a clean pan, hot and oily. We give a couple of laps and serve hot. Done! Omelette Black Pudding 3


  • 4 pieces of black pudding
  • 1 potato mid size
  • 3 eggs
  • olive oil
  • salt
